A couple of weeks ago, I went on a weekend trip with friends to go rafting! Besides rafting being the main event, I was able to do a lot of cooking and baking for the group.

Everyone got there on Friday at different times, but Michael and I left the Bay Area first to avoid the traffic. When we got there, we unpacked and I started making the beef pho.
The pho was for Saturday, but the broth takes a while to finish, and I like the more clean, roasted broth so that takes about 8+ hours. For dinner, I made everyone beef wellington, with a side of creamed spinach, mash potatoes, and for dessert, we had raspberry brownie cheesecake. Somewhat drinking and playing games afterward part I.
Saturday was our rafting day! We had to be at the site by 9 AM, so I made crepe for myself that morning, and I believe some of the guys made egg sandwiches.
Once we got back to the house, we relaxed, and decided to go wine tasting. Once we we rolled egg rolls together. When it was dinner time, we fried up the egg rolls and had pho. Drinking and playing games afterward part II.
Our checkout time for the AirBnB was at noon on Sunday, and I wanted us to have brunch before we left. I made a brunch meal for the group. Dishes included: French toast, roasted potatoes, scrambled eggs, fruit salad, and raspberry millefeuile.
And yes, I realized I was the only girl in the group the week that we went on the trip. Welp. In my defense, Michael is one of the girls too tho.
Are you guys planning any weekend trips for the summer or going on a big trip soon? Would love to hear about it!
